Taste it Tuesday: Summertime Recipes with Tropical Traditions Coconut Oil









I'm so excited that I was able to review one of my FAVORITE foods...COCONUT OIL!!!!




Here's the recipes for my 3 favorite Tropical Traditions Coconut Oil dishes.

Coconut Popcorn
1/2 cup Organic corn kernals
2 tbls Virgin Coconut Oil
Large sauce pan with a lid

Directions: 
Heat up oil in sauce pan on medium
Add in 2 kernals and wait for them to pop
Place rest of kernals in oil and cover with lid
Once the popping stops remove the popcorn from the sauce pan
Add a sprinkle of salt, cinnamon, or any other spice you'd like!

Oven Fried Coconut Chicken
2lb Skinless, boneless chicken breasts
1 1/2 cups Gluten-free flour
1cup Almond Milk
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp salt & pepper
Baking Sheet

Directions:
Preheat oven to 350 degrees
Put coconut oil on pan and let melt in the oven
Slice chicken breasts into 1 inch strips
Place in bowl of almond milk and let sit for 5 minutes
Mix together all dry ingredients
Remove chicken from milk and place in a baggie mix with dry ingredients
Shake until well covered
Take the pan out of the oven and place chicken on pan
Bake for 15 minutes, then turn chicken over and let it bake for another 15 minutes
Remove from oven and place on baking rack to cool and retain crispiness

Coco-Banana Smoothie
2 frozen bananas
1/2 cup rolled oat flakes
1 cup milk (use more or less to adjust to desired consistency)
1/2 cup coconut peanut butter or peanut butter
1-2 tablespoons coconut oil, melted
dash cinnamon
1 teaspoon vanilla

Directions:
Place all ingredients in a good blender
Blend until smooth and well mixed 
Pour into 2 glasses and drink immediately.
